Ingredients

  • 2 cans of refrigerated biscuit dough (16 oz each)
  • 1 cup pumpkin puree
  • 1/2 cup granulated sugar
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, melted
  • 1/2 cup brown sugar
  • 1/2 cup chopped pecans (optional)
  • 1/2 cup cream cheese (for drizzle, optional)
  • 1 cup powdered sugar (for glaze, optional)
  • 2 tablespoons maple syrup (for glaze, optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a bundt pan with cooking spray or butter.
  2. Prepare the Dough: Open the biscuit dough and cut each biscuit into quarters. In a large bowl, combine the pumpkin puree, granulated sugar, pumpkin pie spice, and cinnamon. Toss the biscuit pieces in this mixture until well coated.
  3. Layer the Dough: Layer half of the coated biscuit pieces in the prepared bundt pan. Sprinkle half of the chopped pecans over the top. Pour half of the melted butter and half of the brown sugar over the layer.
  4. Repeat the Layers: Add the remaining biscuit pieces on top, followed by the rest of the pecans, melted butter, and brown sugar.
  5. Bake: Bake in the preheated oven for 30-35 minutes, or until golden brown and cooked through. Allow to cool for 10 minutes before inverting onto a serving plate.
  6. Make the Glaze: If desired, mix cream cheese, powdered sugar, and maple syrup in a bowl until smooth. Drizzle over the warm monkey bread before serving.
